Any leftover citrus syrup to use in breakfast cocktails, desserts, or to mix additional servings of the drink.

Bikini Recipe

Makes enough for 10 servings

For the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Cocktail (yields 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

Making the Syrup: Put all the components inside a pot, heat until it reaches a light boil, stirring to dissolve. Then, remove from the burner and leave to cool down fully. Decant into a sterilised bottle, cap it keeping it chilled, it will last for up to one month.

For the Premix: Pour the specified liquids in a sizeable container, leave to sit for 60 minutes, then filter it preferably using cheesecloth, so it's completely strained.

For serving: Add 85ml of the cocktail base to a cocktail shaker packed with ice, and agitate lightly for about 60 seconds until cold. Filter into a chilled martini glass or a similar vessel, top with the cranberries and complete it with a quick spritz with the mandarin essence over the drink.
